Rumba’s “Love in Four Courses” Valentine’s menu mixes freshness, balance, and simplicity for the perfect sauce of healthy, flavorful love.
Love, like Spanish cuisine, isn’t shy about big flavors or feelings, and creates magic from how simple things are done well with consistency. Like Tapas culture, love grows with shared moments, inside jokes, late-night snacks, or stealing fries. Everything tastes better when it’s done together.
That is why for this year’s month of love, it just makes sense to celebrate connection with your Galentine—a partner, your friends, family, or even yourself—with the rich flavors of Spanish cuisine. For that, there is Rumba, The Bistro Group’s Mediterranean restaurant, which offers a blend of Spanish, Italian, Greek, and French dishes that all speak of love in indulgent ways.









Rumba has curated a special menu, called “Love in Four Courses,” that you and your loved ones can celebrate Valentine’s Day with all month long this February. It highlights a mix of Spanish and Mediterranean flavors, a nod to freshness and balance which, by the way, also makes for the perfect sauce of healthy love.
Pablo Ramirez, the new executive sous chef of The Bistro Group’s Spanish concepts, describes the menu as one where each dish moves between tradition and playfulness, starting light and vibrant, deepening into richness and warmth and finishing with comfort and elegance.



“I combined Spanish products like piquillo peppers and bacalao with classic Mediterranean elements such as olive oil, herbs, natural acidity, and light grilling,” the chef said. “The Rumba flair adds movement and warmth, creating dishes that feel sun-driven, vibrant, and deeply connected to the Mediterranean table.”
“The menu is a progression of flavors, textures, and emotions, designed to be felt as much as tasted,” Ramirez added.
The POST got a sneak peek at the menu last February 5 at Rumba’s location in The Shops at Ayala Triangle Gardens. Our gastronomic adventure that afternoon was packed with flavor from start to finish.

For starters, we had the Piquillo Pepper with Cod Fish Brandade, where the fish was whipped with salt, cooked in olive oil and garlic, then served with piquillo peppers. It was the perfect warm-up to the four-course meal, with the fish having a mild, almost buttery flavor and the pepper adding a tinge of spice without overpowering the dish.



Next up was another tapeo that instantly became a crowd favorite: the Montadito of Gambas. The dish’s main stars were the fresh sautéed shrimp served on top of corn bread along with red onion, cilantro, and lime. It tickled taste buds with how it balanced freshness, sweetness, acidity, and heat, all in one bite.



The balanced tapeos set the stage for the crave-worthy main course: the Secreto Ibérico. It’s a hearty dish featuring 180 grams of Ibérico secret shoulder, or the “butcher’s secret,” a highly prized, fatty, and tender cut from the Black Iberian pig.
It’s a real standout with how each bite offered rich umami, gentle nuttiness, and a silky texture as the fat melts on the palate. Ramirez explained, “We prepared it simply, allowing the meat to shine—carefully cooked in the Josper Grill to preserve its juiciness, then paired with soft sweetness and acidity to balance its natural richness.”
Even on its own, the meat is already delicious. But dipping it in the camote and carrot puree, atchara, and toffee that are served on the side adds an extra kick to the mouthwatering dish.



The four-course meal ended on a sweet, satisfying note, with Rumba’s Chocolate Tart with ganache and berry compote. A true cherry on top, the dessert offered richness, creaminess, and lightness that brought structure and comfort to the elegant menu.
Rumba recommends enjoying Love in Four Courses with its signature cocktails, such as the Rumba Spritzer or Atlantico Gin & Tonic, which are treats for the palate like everything else on the menu.
