A charred octopus course follows, served with romesco sauce, cherry tomatoes, and puffed quinoa. A refreshing rosé wine berry sorbet then prepares the palate for the main course.
Guests may choose between two meticulously prepared options. One features U.S. beef and foie gras or dry-aged beef tenderloin, grilled and accompanied by glazed heirloom vegetables, a potato rosette, and Bordelaise sauce. The other presents Chilean seabass and lobster, paired with three preparations of asparagus, a poached egg, potato fondant, and champagne velouté.
