Delicate amberjack Carpaccio is paired with fennel and pine nuts, while Caponata—a beloved island staple—is reimagined atop crispy toast with king red prawn and spicy jam. Completing the appetizer course is Panelle, the iconic chickpea fritter often enjoyed from neighborhood street vendors, enhanced with parsley emulsion and fried capers, while preserving the comforting familiarity that has made it a local favorite.

At the heart of the experience is artisanal Fregola with clams, a unique handcrafted pasta specialty that reflects the islands’ enduring connection to the sea through briny seafood flavors and the savory depth of Bottarga. Alongside it, wood-fired roasted lamb rack and pork belly pay tribute to centuries of pastoral tradition, complemented by seasonal fava beans and zucchini salad that embody the simplicity, freshness, and rustic elegance of the Italian countryside.
