As a chocolate maker and a chocolatier, Chef Ely nurtures his own farm, El Fortunella, where he sustainably sources most of his ingredients, especially the cacao beans, with the help of local farming communities. Growing his own cacao beans allows him to do endless creations and push the possibilities, which led him to create his first Praline Chocolate Collection for Patisserie Le Choux-Colat.
