DAVOS at Fairfield by Marriott Cebu Mactan is now open, offering contemporary local cuisine with modern flair just minutes from the airport.

Now open at Fairfield by Marriott Cebu Mactan, DAVOS is the property’s all-day dining destination, officially launched on April 15, 2026. Located just minutes from Mactan-Cebu International Airport, the restaurant positions itself as both a first taste and a final send-off—equally fitting for arrivals seeking immediacy and departures craving something memorable.

Named after the Cebuano word dabos, meaning abundance, DAVOS draws from the island’s rich marine and culinary heritage. The concept leans into what Executive Chef Marcel Ramos describes as “Coastal Filipino”—a cuisine shaped by local tradition but refined through modern technique. “My approach is grounded in Cebu’s iconic sinuglaw,” he shares. “It’s about balance—bringing together savory, acidic, and umami elements in a way that feels both familiar and elevated.”

This philosophy comes through in a menu that reworks comfort dishes with intention. Standouts include Shrimp Inasal, Crispy Pork Belly, Soy-Glazed Grilled Chicken, and Beef and Mash, alongside a quietly indulgent Ube Burnt Cheesecake. The selections feel recognizable yet considered—anchored in heritage, but calibrated for a more contemporary palate.

Open daily from 6 a.m. to 10 p.m., DAVOS accommodates both hotel guests and walk-ins within a warm, modern space that seats up to 87. The atmosphere is relaxed but polished—suited for everything from casual meetups to group gatherings. Evenings take on a more social rhythm with Beer Hour, where guests can opt for unlimited beer cocktails—think Summer Beer, Beer Mosa, or Shandy—paired with pica-pica such as spiced chicken croquettes, tokwa’t baboy, squid crackers, or fries.
